This is the first DOOMED offering from El Salvador, and our first honey process coffee as well. This process, also known as pulped natural involves pulping the ripened cherries and then drying the coffee beans while still covered in mucilage. This takes place on clay patios while constantly turning the beans to ensure even drying. You can think of this as striking a delicate balance between a washed and a natural process coffee.
This coffee was grown by JASAL, where Jose Antonio Salaverria and his sons operate a farm that contains a lagoon which is populated by thousands of frogs - Cerro Las Ranas translates to "The Hill of Frogs." The family farm is located in Apaneca within the department of Ahuachapan.
